Method
1. The first step to this dish's success lies in the texture. Take the potatoes, peel them carefully, and use a mandoline to slice them into very thin, almost transparent sheets; this ensures they become exceptionally crispy. Fry them in plenty of extra virgin olive oil and do so in small batches so they don't crowd the pan. When they reach that golden tone and perfect stiffness, remove them onto paper towels and give them a light touch of salt while they are still hot.
