Curries are the star dish in my home! Today, I’m showing you how to prepare one of my favorites: King Prawn Curry. It’s a super simple recipe, full of color and that exotic touch we love so much, but made easy so you get it perfect on your first try.
The key here is the quality of the ingredients, and these king prawns provide an incredible flavor. With a base of sautéed vegetables, the aroma of ginger, and the creaminess of coconut milk, you’ll travel straight to Southeast Asia without leaving your kitchen. It’s the ideal dish to impress guests or simply to treat yourself to something healthy and delicious. Ready to cook?

Ingredients
- 500g king prawns (Prawn Tails peeled)
- 1 carrot
- 1 red bell pepper
- 1 green bell pepper
- 2 tsp curry powder
- 1/2 tsp ground ginger
- 3 tbsp crushed tomatoes (tomato purée)
- 400ml coconut milk
- Lime
- Cilantro (fresh coriander)
Method
1. Start by finely chopping the carrot and the peppers. In a pan with a drizzle of oil, sauté them for about 6–8 minutes until they are tender and have a bit of color. At that point, add the curry powder and ground ginger; let them toast for just a few seconds to release their full aroma (be careful not to burn them!). Immediately after, stir in the 3 tablespoons of crushed tomatoes to bind all the flavors together.

2. Now, pour in the 400ml of coconut milk. Mix it well with the sautéed base and let it cook over medium heat for 10 minutes. You’ll see how the sauce gradually reduces, thickening and transforming into that creamy wonder we love.

3. Finally, add the king prawns. They only need 3 minutes of cooking to stay juicy and perfectly tender, absorbing all the flavor of the sauce without overcooking. The smell in your kitchen will already be irresistible!

4. Serve it piping hot over a bed of rice (any rice works, but if you want India authentic flavor, use Basmati rice). For the final touch, don’t forget a squeeze of fresh lime juice and some chopped cilantro on top. It adds an amazing freshness!
