Grilled white tuna belly fillets

The belly, one of the tastiest parts of the white tuna.

Ingredients

- 1 white tuna belly

- 3 cloves of garlic

- 1 large tomato

- 1 large onion

- Salt

- Extra virgin olive oil

Method

Cut the onion into rings and the tomato into slices. Put extra virgin olive oil in a frying pan and fry the onions. When the onions are almost ready, bring them together towards the edge of the frying pan, leaving the centre of the pan free. Salt the onions. Put the tomato slices in this hole and salt them. When they are done on one side, turn them over. When the tomato is done, turn off the heat and leave in the frying pan to keep warm while you cook the ventresca in another frying pan.

Slice the garlic. Put a little extra virgin olive oil in a grill pan and fry the garlic in the centre until golden brown. Add the white tuna belly fillets on top of the garlic and salt. Grill on a hot grill and sear on each side.
