Baked cod with vegetables

Baked cod is one of the most popular recipes prepared by any cook, as it is a very popular fish with a flavour and texture that is very popular. Preparing baked cod with vegetables is quick and easy and, if you follow our recipe, your guests will love it.

Ingredients

- 2 pieces of cod or SKREI cod loin

- 1 small courgette

- 1 small red pepper

- 1 small yellow pepper

- 12 cooked baby potatoes

- 1 small cherry tomatoes

- Salt, black pepper and extra virgin olive oil

Method

Slice the courgette and cut the yellow and red peppers into strips. Place the vegetables on a baking tray, starting with the courgette on one edge, the peppers in the centre, the baby potatoes on the other edge and the cherry tomato branch on top. Add salt and ground black pepper to the vegetables and a good splash of extra virgin olive oil. Bake in a preheated oven at 200°C for 30 minutes.

Optional: you can add aromatic herbs of your choice, oregano, thyme...

Season the 2 pieces of cod loin with salt and pepper and add a drizzle of extra virgin olive oil to each piece. Remove the vegetable tray from the oven and make a hole in the centre. Place the two cod loins in the centre and bake again in the oven for 10 minutes.

The loins will be very juicy and you will have a delicious and easy recipe.
