Baked salmon with vegetables

Prepare a spectacular baked salmon with vegetables. If you are looking for a quick and easy fresh salmon recipe, this is the best option.

Ingredients

- 1 large salmon fillet

- Small courgette (150 gr.)

- Wild asparagus (1 bunch)

- Mushrooms (100 g)

- Fresh dill (50 gr. on a stick)

- Extra virgin olive oil

- Ground black pepper

- Salt

Method

Preheat the oven to 200 degrees Celsius. Season the salmon on both sides with salt and pepper and cut it into pieces about 3 centimetres wide. Peel the courgette and cut it into thick slices and then cut them in half. Slice the mushrooms. Halve the wild asparagus.

In a baking dish, place the asparagus at one end, the mushrooms in the middle and the courgette at the other end, forming 3 strips and covering the tray. Salt the vegetables and drizzle with a dash of extra virgin olive oil.

Place the salmon pieces on top. Salt them and add a drizzle of extra virgin olive oil on top. Chop the fresh dill and sprinkle over the salmon. Bake in the oven at 200 degrees for 25 minutes.

Serve with a piece of salmon loin and the al dente vegetables around it, as a garnish.
