Sea bass in salt with cherry tomatoes

Cooking sea bass in the oven is very easy and our recipe for sea bass in salt with roasted cherry tomatoes is a spectacular dish that everyone loves. If you don't know how to make sea bass, here's a baked recipe that's perfect for any occasion.

Ingredients

  • 1 wild sea bass (1.5 kg.)
  • Cherry tomatoes (200 gr.)
  • Mixed spices (oregano, thyme, parsley, ground garlic...)
  • Black peppercorns
  • rocket leaves (30 g)
  • 4 sprigs of fresh rosemary
  • Extra virgin olive oil
  • Baking salt (2 Kg.)
  • Table salt 
  • Fresh parsley (sprigs for decoration)

Method

Preheat the oven to 200 degrees Celsius. Place the Cherrys in a baking dish and add all the spices and salt. Drizzle with extra virgin olive oil and add the peppercorns and sprigs of fresh rosemary. Bake in the oven.

Put baking paper in a baking dish and add a base of baking salt. Place the wild sea bass on top and cover it completely with salt, leaving the tail free. Make a small hole in the salt so that the eye of the sea bass can be seen. Make a cut with a knife in the salt, marking the outline of the sea bass. Bake in the oven at 200 degrees for 50 minutes. When the tail of the sea bass comes off very easily and the eye is white, it is ready.

Remove the salt from the sea bass, head and tail. Open the sea bass into a book and remove the bones. Add some rocket leaves around it.

Remove the Cherrys tomatoes from the oven.

Place a piece of sea bass on the plate and serve with a few Cherrys tomatoes as a garnish and a little sauce from the tomato tray. Finish with a sprig of fresh parsley.
