The Sardina pilchardus, popularly known as the European sardine, is one of the most iconic oily fish of the Atlantic Ocean and the Mediterranean Sea. This fish, which travels in dense schools through open waters, stands out for its slender silhouette with a blue-green back and silvery sides. Its diet, based mainly on the plankton it filters from the water, determines its high content of heart-healthy fat, especially omega-3 fatty acids.

The seasonal abundance of this resource along the coasts forced people since ancient times to look for ways to extend its shelf life. Although the Romans already used salting techniques in their factories across the peninsula, the true revolution came with the canning technique and thermal sterilization in the nineteenth century. This breakthrough made it possible to catch the sardine at its optimal moment of fat and flavor, keeping it intact for years inside a pantry.

In this context, the Galician rías (estuaries) became the epicenter of high-quality fish canning. The Galician canning tradition was forged thanks to the arrival of Catalan pioneers at the end of the eighteenth century, who introduced pressing and salting methods that would later give way to canning in olive oil. The combination of an exceptional raw material, obtained through traditional and sustainable fishing gears, with a know-how passed down from generation to generation, consolidated the region as an international benchmark.

The subsequent roasting or steaming stabilizes the flesh before it is neatly arranged into the can. The packing medium—usually olive oil—plays a crucial role that goes beyond simple preservation. Over months in the cellar, the oil interacts with the natural juices and fat of the sardine, maturing the product and developing a mellow texture and a well-rounded flavor that improves over time. The result is a food of high nutritional density, rich in protein and calcium, which concentrates the essence of the sea in a shelf-stable and accessible format.
