Ingredients
- Salmon loin
- Soy sauce
- Curry powder
- Black sesame seeds
- Wheat or corn tortillas
- Mango

Method
1. Start by cutting the salmon loins into uniform, bite-sized cubes. In a bowl, mix them with a generous splash of soy sauce, a teaspoon of curry powder, and black sesame seeds. Let them soak up all the aromas while you prepare the rest; this marinade is what truly makes the difference.

2. The secret to keeping the salmon juicy on the inside and golden on the outside is the air fryer. Set it to 185°C for about 10 minutes. Don’t overcook it; we want the healthy fats of the salmon to shine and the meat to melt in your mouth. If you don’t have an air fryer, a quick sear in a pan over high heat also works perfectly.

3. While the salmon is cooking, prepare the salad that will bring freshness to the taco. Finely chop the tomato, red onion, and mango (the sweet touch is key). Add freshly chopped cilantro and season with a generous amount of lime juice and a drizzle of EVOO. This blend of flavors will enhance the spicy notes of the curry.

4. Lightly warm the wheat or corn tortillas so they are flexible. Spread a generous base of guacamole in the center of each tortilla; this will act as the perfect "glue" to hold everything together and provide an irresistible creaminess.
