Desalted cod with pepper sauce

Ingredients
- 1 loin of desalted cod extra
- 1 red pepper
- 1 medium sweet potato
- 1 large port
- Caramelised onion (50 gr.)
- Extra virgin olive oil
- Salt
- Fresh parsley (sprigs for garnish)
Method
Preheat the oven to 200 degrees Celsius. Place the red pepper and the peeled and coarsely chopped sweet potato in a baking dish. Salt and drizzle with extra virgin olive oil. Bake in the oven for 40 minutes.
Sauté the finely sliced leek in extra virgin olive oil and when it is sautéed add 4 tablespoons of caramelised onion (you can buy it or make your own at home), you will see how much flavour it gives to the leek.
Remove the tray from the oven. Peel the red pepper in the tray and blend it with the sweet potato and the broth it has released.
Cut the cod loin into three pieces. Brush with extra virgin olive oil. In a frying pan over high heat, add a pinch of salt (no oil) and add the cod loins and cook them on both sides. Remove when done.
Serve with a strip of pepper sauce, a piece of cod in the centre and the leek garnish on the other side. Finish with a sprig of fresh parsley.
