Sole burgers with chipotle mayonnaise


For the burgers: Ingredients for 2 portions of 120 g each

- 140 g skinless sole fillets
- 1/4 red onion
- 1/2 garlic clove
- 1/2 teaspoon salt
- 1 pinch white pepper
- 1 medium egg
- 2-3 teaspoons breadcrumbs
- 1 drizzle olive oil

For the chipotle mayonnaise:

- 100 grams olive oil
- 1 medium egg
- 1 pinch salt / 1 chipotle pepper in adobo



First, we're going to prepare the chipotle mayonnaise. Add the eggs and chipotle chilli to a blender glass. Making sure the blade is at the bottom of the mixture and without moving it, start blending. Gradually add the oil while blending. The sauce will begin to emulsify and when everything is mixed, we can continue beating but raising and lowering the arm of the mixer until we get our finished homemade sauce. Once ready, cover and store it in the fridge.

To prepare the fish burgers, first clean the sole if you've bought it fresh, removing the skin and the four fillets. You can also ask your fishmonger to fillet it for you.

Once you have the fillets, add them to a blender along with the red onion and garlic and blend until you get a white paste. Transfer it to a bowl and add the salt, egg and breadcrumbs and mix until everything is well integrated.

Divide the mass into two parts and shape it into hamburgers. Fry in a pan over a medium heat with a splash of oil and cook the sole burgers to taste. Accompany them with chipotle mayonnaise and a simple salad.
