Mariskito salmon roe is extracted from salmon of the Keta variety. These eggs mature inside the females during the spawning season until they become strong. Just before spawning, the best specimens are carefully selected and the eggs are removed when they are fully formed so that they have the right consistency and size (between 4 and 7mm in diameter). The high nutritional value of such a simple ingredient as salmon roe or salmon caviar is remarkable, as it is a great source of proteins, vitamins and minerals, and contains a large amount of Omega-3 fatty acids, which makes it a food with great properties for cardiovascular health.

Salmon roe is perfect for making appetizers and cold dishes, as its flavour combines perfectly with any ingredient, adding colour and texture to toasts, kebabs and other dishes. The roe of the Keta variety has a fairly consistent shell, which prevents it from being crushed or broken and makes it easy to separate.
