Ingredients

For the crispy rice:

  • 300 g sushi rice
  • 360 ml water
  • 4 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt Oil for frying

For the tartar:

  • 300 g premium norwegian smoked salmon
  • 1/2 ripe but firm mango
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • Lime zest
  • A few drops of lime juice
  • Grated fresh ginger
  • Mayonnaise Sriracha

To garnish:

  • Toasted sesame seeds
  • Lime zest

Method

To prepare the base, rinse the rice several times until the water runs clear, cook it, and while it is still hot, season it with the mixture of rice vinegar, sugar, and salt. Spread it evenly over a tray lined with cling film, pressing down firmly to form a compact layer about 2 cm thick, and let it chill in the fridge for at least four hours so it sets properly. Finally, remove the rice layer, cut it into squares with a dampened knife, and deep-fry them in plenty of very hot oil just before serving; this ensures they turn out golden and super crispy on the outside, yet tender on the inside.

Cut the salmon fillets and the mango into small, clean cubes; for the mango, it is best to choose a piece that is firm, as this will provide a crisp texture and a much fresher contrast.

Place both ingredients in a bowl and season them with the soy sauce, sesame oil, a splash of lime juice, grated ginger, mayonnaise, and your preferred amount of spicy kick. Mix everything gently and let it rest in the fridge for about five minutes so the fish and fruit fully absorb the marinade.

Place the rice squares on the plate and, using a spoon, place a generous portion of the reserved salmon and mango tartar onto each crispy rectangle, pressing lightly so it holds together well.
