Pacific oyster

This oyster of French origin is cultivated in Galicia in rafts, just like we do with the native Galician flat oyster.

They’re usually eaten alive, with a few drops of lemon, and have always been associated with sophistication and luxury.

Due to their size, unlike the flat oyster, the smaller Pacific oysters are the most prized, while the larger ones are cheaper to buy.

The Pacific oyster (crassotrea gigas), of course, is native to the Pacific, but it was the French who introduced and developed its cultivation several decades ago. Today, it’s cultivated all over the world, including in Galicia. In Galicia, it is cultivated in rafts in a similar way to the flat oyster. It may not be as well known in our country as the flat oyster, but in recent years it has become increasingly popular.

The oyster is rich in omega-3 fatty acids and minerals (iron and zinc) that protect us from carcinogenic factors and strengthen our immune system.

Oysters are regarded as one of the finest seafoods, and it’s best to eat them fresh and raw, with or without lemon, accompanied by a good Albariño wine. However, they can also be prepared in other ways, such as battered in cornflour and fried or pickled.

Due to their size, unlike the flat oyster, the smaller Pacific oysters are the most prized, while the larger ones are cheaper to buy.
