This oyster of French origin is cultivated in Galicia in rafts, just like we do with the native Galician flat oyster.
They’re usually eaten alive, with a few drops of lemon, and have always been associated with sophistication and luxury.
Due to their size, unlike the flat oyster, the smaller Pacific oysters are the most prized, while the larger ones are cheaper to buy.
