Langostino prawns in chilli oil

Ingredients

- Langostino prawns (40 pcs.)

- Chives (8 sprigs)

- Olive oil (60 ml)

- Chilli oil

- Salt

Method

Heat the casserole and olive oil, add the peeled and fully dried prawn tails, add the chilli oil and chopped chives, then cover and cook for 1 minute. Serve the casserole covered.

Method - Chilli Oil

Ingredients

- Langostino prawn heads

- Garlic (4 cloves)

- Dried guindilla chillies (3 pcs.)

- Olive oil (45 ml)

- Salt

Heat the oil and add the sliced garlic, brown it and bring out the perfume, add the chillies and dry prawn heads. Without water, cook until the head roe semi-coagulates, remove from the heat, and then once cold, crush the head corals.
