Galician-style skate stew

Skate (or ray fish) is a very common fish on the Galician coast, where it has been eaten for a long time. Its low fat content and gelatinous flesh make it a very different fish with a particular texture. The most typical recipe in our land is the Galician-style skate stew. Ingredients

1.5 kg of skate (ray wings) 1.5 kg of potatoes (better if they are Galician) 1 large onion 1 pinch of ‘unto’ (about 2 cm) 3 small spoonfuls of paprika de la Vera 3 cloves of garlic 3 tablespoons of white vinegar Extra virgin olive oil, coarse salt and parsley for garnish

Method

Peel and wash the potatoes and cut into large chunks. Cut the onion into large wedges. Bring water to the boil in a pan and add coarse salt. When it starts to boil, add the potatoes and onion and cover the pan. Leave to boil for 15 minutes. Cut the skate fins into 2 pieces to make 4 portions. Do not cut into small pieces, as they will fall apart in the pan. Prick the potatoes with a knife to check that they are boiled and place the pieces of ray on top. Add salt and leave to cook for 6 minutes. While the skate is cooking, prepare the "ajada". Preparation of the "ajada" Peel the garlic and crush it with a knife so that it is flattened. In a frying pan over a high flame, add the fat and slide it around the frying pan until it melts and releases the fat. Add the garlic to the fat and brown it. Once the fat has rendered, remove from the frying pan so that it does not burn. Then add the extra virgin olive oil and when it has warmed up, turn off the heat. Add the paprika de la Vera and stir well so that it does not burn. Then add the white vinegar and continue stirring. Now you have prepared a delicious ajada for the skate caldeirada. Serving Turn off the heat. Remove the potatoes (without the stock) and place them on a plate. Then add a piece of skate and the ajada on top, garnish with parsley.
