Grilled salmon with fried onion and tomato

Ingredients

- Salmon (8 fillets of 80 g)

- Salt flakes

- White pepper

- Chives (a few sprigs)

- Olive oil (30 ml)

- Onion (2 units.)

- Brown sugar (1 tablespoon)

- Ripe tomato (2 units.)

Method

Heat the pan, add oil and then the onion, cook until golden, add the sugar and cook until it caramelises. Cut the tomatoes in half, season with salt and pepper, brush with oil and grill on a hot pan. Heat a pan, add oil, then the salmon, brown on the skin side then turn and cook on the other side. Plate up the salmon and its garnish, accompanied by the chives, oil and salt flakes.
