The lower part of a hake’s chin is called a ‘cococha’ in Spanish, but it’s generally referred to as a cheek in English. It’s of excellent quality and extracted from freshly-caught Cantabrian hake. Once cleaned and selected, it’s vacuum packed in 300 g trays and frozen. This is a frozen product, although we occasionally offer it fresh.

“Cocochas de merluza al pil pil” (pil pil hake cheeks) are a classic of our cuisine, especially at Christmas. Hake is a hugely popular white fish in Spanish gastronomy and perfect for low-fat and children’s diets.
