Tub gurnard

It is also found in the sandy depths of the Mediterranean Sea and in the Black Sea. It is known for its shiny skin and golden scales, which gives it its name. Its flesh is white and tender, with a mild, sweet taste.

It has many bones, which is why it is usually used in broths and rice dishes, although it can be cooked sliced if it is well cleaned of its bones.

The Tub gurnard (Trigla lucerna) lives in warm, tropical seas. It is found at depths between 100 and 500 metres. It prefers rocky bottoms, although it can be found in muddy meadows and sandy bottoms. In summer they travel to the coasts to spawn.

Fish with a robust and tight body. The head is large and covered with spines. The mouth is wide and its snout is elongated. Its body is red and pale pink in colour, with dark bands on the sides.

The Tub gurnard is a semi-fatty fish with firm white flesh and excellent flavour, but with many bones. It has many bones, so it is a common ingredient in the preparation of broths and rice dishes, although it can be used in many other recipes, and can be cooked cut into loins if it is well cleaned of bones.
