Grouper

Pieces of approx. 4 kg. Grouper has a robust and voluminous body, as well as firm and tasty meat. Numerous species come under the generic ‘grouper’ name. The grey grouper is the most common on the Atlantic coast, characterised by its dark grey colouring, though lighter on the belly.

Due to its large size and high commercial value (the smallest pieces are approx. 4 kg), it’s less common for daily domestic consumption and more popular for gatherings with family or friends.

The grouper (Epinephelus guaza) is commonly found in the Atlantic Ocean and Mediterranean Sea, but there are other varieties distributed across warm and tropical seas.

It’s a fish with a robust and voluminous body. The head is elongated, with bulges between the eyes and along the forehead. The lower jaw is prominent, and its teeth are arranged in at least three rows. The grouper’s snout is large and wide, with very thick lips. It can measure up to two metres in length.

Grouper, a semi-fatty fish ideal for low-fat diets, is a healthy product that provides essential amino acids for the proper functioning of our bodies. Nutritionally, it provides a number of both minerals (phosphorus, magnesium and potassium) and vitamins (B2, B3, B6, B9 and B12), particularly vitamin E, unusual in fish and which acts as a natural antioxidant.

Grouper has excellent quality meat, firm and flavourful, which adapts to different methods of cooking: grilled, steamed, in casseroles, and more. However, many believe that the best way to get the most out of its flavour is on the grill, either with tartar sauce or with a dressing of olive oil, garlic and parsley.
