Moray Prawn

It is a type of prawn that is similar to shrimp and carabinero, with an intense purple-red colour and excellent flavour. It is usually grilled.

There are between 25 and 35 pieces per kilo. It is caught by trawling in coastal areas near the northwest of South Africa. Frozen product.

The Moray prawn (Aristaeomorpha folicea) inhabits muddy and sandy bottoms of the Eastern Atlantic at depths between 120 and 1000 metres, and feeds on organic debris. It is also found in other oceans, with the exception of the eastern Pacific.

The fact that both the red shrimp (Penaeus edwardsiauns) and the Moray prawn have similar saturated red colours can lead to confusion, although there are notable differences between them, both in size and shape.

The Moray prawn is generally of medium size. It has a head crowned by a horn, with a smooth ventral edge: elongated into a needle (in females), but short (in males). Males grow up to 17 cm and females up to 22 cm.

It is usually grilled ‘turn and turn’ for a short time. The oil it provides is very tasty and useful for various culinary uses.

In order not to alter the quality of this product, do not refreeze once defrosted. Defrost in the refrigerator and consume within 24 hours after cooking. It should be borne in mind that the transport used is suitable for fresh products, so we cannot guarantee that the Moray prawns will arrive frozen at their destination.
