Ossobuco

Part of the calf's leg, running from the calf to the hock of the animal, cut crosswise with the bone in the centre. Cut into a very thick, tender and slightly gelatinous piece.

This cut is usually prepared in succulent stews, as this is the best way to enjoy the tenderness of the meat. It can also be eaten in appetizing stews or casseroles. Veal osso buco is vacuum-packed, with each piece weighing approximately 300 to 400 grams.
